Pumpkin Pecan Cobbler

Even though we had to cancel Dinner Theatre this year, we wanted to share some Dinner Theatre Recipes so you can enjoy a taste of camp from home this Holiday season! This week's recipe is Pumpkin Pecan Cobbler!

Pumpkin Pecan Cobbler

1 cup + 3 tablespoons all purpose flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup of sugar
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon cloves
½ cup pumpkin puree
¼ cup milk
¼ cup melted butter or oil
1 teaspoon vanilla

½ cup sugar
½ cup brown sugar
¼ cup chopped pecans
1 ½ cups very hot water

Step one - Preheat oven to 350 degrees

Step two - In a medium bowl mix together flour, baking powder, salt, sugar, and spices

Step three - In a smaller bowl mix pumpkin, milk, melted butter, and vanilla together. Pour wet ingredients into dry ingredients and mix completely. Pour into an 8 inch casserole.

Step four - Stir brown sugar and pecans together and spread over the top of the batter. Pour hot water over the entire thing (do not stir in) and bake for 40 minutes or until middle is done. Bake on baking sheet just in case it bubbles over.
